Tonight I had oven baked Golden Beetroot chips, carrot, pan-fried mushrooms, roasted aubergine, squashed peas and pesto cream cheese.
I love mushrooms and I like sucking them for ages cos they are very juicy. I haven't had peas before; they were ok but nicer when I had them with cream cheese - it had Mummy's pesto in it.
Afterwards I had strawberry yoghurt, but I threw that on the floor.
Yummy and Easy Pesto
Basil leaves
Pine Nuts^
Olive Oil
Pecorino or Parmesan cheese
Wash the basil and dry it
Pop it in a blender and add a small handful of pine nuts
Whizz it up adding pecorino to taste (remember it's salty so add small bits)
Pour in the olive oil and keep whizzing
Taste it lots and add more of any of it if you need too

Store in a pot in the fridge and add extra olive oil if it looks a bit sad

Mix with cream cheese or pasta or on top of salmon or white fish
(It's not exact so it tastes different every time)
