Monday

Tonight I had a potato rosti for my tea with some courgette and brussel sprouts. I like potato lots and I haven't had it like this before. I ate most of it but I don't think it's my favourite.

On the top Mummy put a slice of hard boiled egg. I liked the yellow bit but the white was a bit funny so I spat it out.

For my afterwards I had baked little apple. It has sultanas in it. I like this a lot cos I can pick it up with my fingers and squidge it. Mummy gave me a spoon to use but I didn't need it so I put that on the floor.


Potato Rosti

Potato
Onion
Strips of cabbage
butter or Olive Oil

Grate the potato and pop it in a tea towel and squeeze to make the juices come out
Chop an onion into very small and fry until soft
Boil or steam the cabbage cheers (but only for a minute)
Add it all together and put some pepper in too
Heat up the oil or butter in a frying pan
Put dollops of the mix in the pan and squash it

Cook for a few minutes and then turn it over and cook more

Serve it with an egg or some cream cheese

You can also put carrot grated in it or other things
